Description

These ultra-fudgy black bean brownies are a healthy, gluten-free dessert that hides fiber and protein in a dense, moist, and rich chocolate treat. Made in one bowl with simple ingredients, they taste like indulgent bakery brownies without the heavy texture.

  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (170g) dark chocolate chunks (70% cocoa)
  • ½ cup (50g) unsweetened cocoa powder
  • ¾ cup (240ml) maple syrup
  • ¼ cup (60ml) melted coconut oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ¼ cup (25g) almond flour
  • 2 tablespoons almond butter
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • Extra dark chocolate chunks for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease with coconut oil or butter.
  2. Add the drained and rinsed black beans to a food processor or high-speed blender. Pulse and then blend on high until completely smooth and creamy, resembling a thick dark paste.
  3. Add the maple syrup, melted coconut oil, eggs, vanilla extract, and almond butter to the food processor. Blend again until the mixture is smooth and glossy, scraping down the sides as needed.
  4. Add the cocoa powder, almond flour, salt, and baking powder. Pulse just until combined; do not overmix.
  5. Transfer the batter to a mixing bowl and fold in 1 cup of dark chocolate chunks using a spatula. If the batter is too thick, add a teaspoon of milk or water to loosen it.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle the remaining chocolate chunks on top.
  7. Bake for 25-30 minutes. The brownies are done when a toothpick inserted into the center comes out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack for at least 1 hour to set properly before lifting them out and slicing into squares.

Notes

Drain beans well to avoid gummy texture. Blend beans until completely smooth to avoid tasting them. Do not overbake; pull when toothpick has moist crumbs. Cool completely before cutting to ensure they set. Can be stored in the fridge for 5 days or frozen for 3 months.
