These one-bowl pumpkin chocolate chip cookie bars are incredibly easy to make, featuring a dense, fudgy texture with warm fall spices and a hint of sea salt. Perfect for last-minute desserts or meal prep.

- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt (kosher preferred)
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- ½ cup packed brown sugar
- 2 large eggs, room temperature
- 1 cup pure pumpkin puree (not pie filling)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cloves
- 1 ½ cups semi-sweet or dark chocolate chips
- Flaky sea salt, for sprinkling on top
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly spray with cooking spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until uniform.
- In a separate bowl or directly into the dry ingredients, whisk the melted butter, granulated sugar, brown sugar, eggs, and vanilla vigorously for about a minute until glossy and thick.
- Pour the wet mixture into the dry ingredients and add the pumpkin puree. Gently fold everything together with a spatula until just combined. Do not overmix.
- Fold in the chocolate chips (and nuts, if using). The batter will be thick.
- Spread the batter evenly into the prepared pan. Bake for 30-35 minutes, or until the edges are golden brown and the center is just set (toothpick should come out with moist crumbs).
- Let the bars cool in the pan for at least 15 minutes. Lift them out using the parchment paper overhang.
- Sprinkle flaky sea salt over the top while still warm. Cut into squares and serve.
Notes
Ensure you use pure pumpkin puree, not pumpkin pie filling. Do not overbake, as the bars continue to cook in the pan. For best texture, let them cool completely before cutting. They keep well at room temperature for up to 4 days.
