Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the room-temperature butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light, fluffy, and pale.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Scrape down the sides of the bowl.
  4. In a separate medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture. Mix on low speed just until combined. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to 24 hours).
  7. Scoop out tablespoon-sized portions of dough. Roll each ball in hands to smooth, then roll generously in confectioners’ sugar until fully coated.
  8. Place coated dough balls on prepared baking sheets, leaving 2 inches between them.
  9. Bake for 9-11 minutes. Cookies should look set on the outside but still soft in the center.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
