Brown Butter Chocolate Chip Cookies: 5-Ingredient Chewy Centers

  • Author: Julia
  • Total Time: 32-34 minutes
  • Yield: 24 cookies 1x

Description

These brown butter chocolate chip cookies feature chewy centers, crisp edges, and a deep, nutty flavor. Made with just a few simple ingredients and a chill time, they are beginner-proof and consistently delicious.

Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • ½ cup (100g) granulated sugar
  • 1 cup (200g) packed dark brown sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups (340g) semi-sweet chocolate chips or chopped chocolate
  • Flaky sea salt, for topping (optional)

Instructions

  1. Brown the butter: Melt butter in a large saucepan over medium heat, stirring constantly until it turns dark amber and smells nutty (5-7 minutes). Pour into a heatproof bowl and cool for 10-15 minutes.
  2. Mix wet ingredients: Whisk granulated sugar and brown sugar into the cooled brown butter until glossy. Whisk in the egg, egg yolk, and vanilla extract until smooth.
  3. Add dry ingredients: Sift flour, baking soda, and salt into the wet mixture. Gently fold with a spatula until no streaks of flour remain.
  4. Fold in chocolate: Add chocolate chips or chunks and fold until evenly distributed.
  5. Chill dough: Cover and refrigerate dough for at least 30 minutes (or up to 24 hours).
  6. Preheat oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop and bake: Scoop dough into 2-tablespoon balls, spacing them 2 inches apart. Bake for 12-14 minutes until edges are golden but centers look soft.
  8. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Sprinkle with flaky sea salt if desired.

Notes

Ensure brown butter is cooled before mixing to avoid cooking the egg. Chill dough to prevent spreading and enhance flavor. Underbake slightly for chewy centers. Use a scale for accurate flour measurement.
