  • 2 large eggs
  • ⅓ cup (100ml) honey or maple syrup
  • ½ cup (120g) unsweetened applesauce
  • 1 medium apple, diced (Gala or Fuji)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt
  • Optional: ¼ cup chopped walnuts, pecans, or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or grease lightly.
  2. In a large mixing bowl, whisk together the milk, eggs, honey (or maple syrup), and applesauce until combined.
  3. Add the rolled oats, cinnamon, baking powder, and salt to the wet mixture. Stir until the oats are fully coated.
  4. Gently fold in the diced apples (and optional nuts or chocolate chips).
  5. Spoon the batter into the prepared muffin cups, filling each about ¾ full (approx. ¼ cup per cup).
  6. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes
