Description
A refreshing, no-cook summer salad combining sweet watermelon, salty feta, fresh mint, and zesty lime juice. It is naturally gluten-free, requires only five minutes to prepare, and serves as the perfect light side dish or palate cleanser.
Ingredients
- 6 cups seedless watermelon, cut into 1-inch cubes
- 1 cup (150g) block feta cheese, crumbled
- ½ cup fresh mint leaves, torn
- 2 medium limes, juiced (about ¼ cup)
- 1 tablespoon extra virgin olive oil
- Freshly cracked black pepper
- Flaky sea salt (optional, for finishing)
Instructions
- Cut the watermelon in half, slice into 1-inch strips, and then cut across to create 1-inch cubes. Discard the rind.
- Crumble the block of feta cheese with your hands into small, irregular chunks.
- Roll the limes on the counter to release juices, cut in half, and squeeze to obtain about ¼ cup of fresh juice. Strain out seeds.
- In a large mixing bowl, combine the watermelon cubes and crumbled feta.
- Drizzle the lime juice and olive oil over the mixture. Sprinkle with black pepper.
- Gently toss the salad to coat ingredients evenly without crushing the watermelon.
- Just before serving, tear the mint leaves and sprinkle them over the salad. Toss one final time gently.
- Transfer to a serving platter. Taste and adjust with extra lime or a pinch of flaky sea salt if needed. Serve immediately.
Notes
For best results, chill the watermelon in the fridge for an hour before making the salad. Add the mint and lime juice only right before serving to prevent wilting and excess wateriness. If the feta is very salty, rinse it in cold water for 30 seconds before crumbling. Do not freeze this salad as watermelon becomes mushy upon thawing.
