Description
These soft, cloud-like baked donuts are ready in just 30 minutes with zero rising time. Made with pantry staples and coated in cinnamon sugar, they offer a lighter, less messy alternative to traditional fried donuts.
Ingredients
- 2 ¼ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated sugar (for batter)
- ¼ cup unsalted butter, melted
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- ½ cup granulated sugar (for coating)
- 1 ½ teaspoons ground cinnamon
- 2 tablespoons melted butter (for coating)
Instructions
- Preheat oven to 350°F (175°C) and generously grease a donut pan with non-stick cooking spray or melted butter.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ¾ cup of sugar.
- In a separate bowl, whisk the melted butter, egg, vanilla, and buttermilk until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix; the batter should be thick and slightly lumpy.
- Transfer the batter to a piping bag or a Ziploc bag with the corner cut off. Fill each donut cavity about ¾ full.
- Bake for 10-12 minutes, or until the donuts spring back when lightly touched and edges are golden brown.
- Let donuts cool in the pan for 2 minutes, then remove to a wire rack.
- While donuts are still warm, dip the tops into melted butter and roll them in the cinnamon sugar mixture to coat.
Notes
Do not overmix the batter to ensure soft texture. Coat donuts while they are still warm for the sugar to adhere properly. Store leftovers in an airtight container at room temperature for up to 2 days. Do not refrigerate as it dries them out. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and oat milk.
