Description

  • 1 ½ cups (300g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups (270g) chocolate chunks (mix of semi-sweet and bittersweet)
  • Optional: ½ cup chopped toasted pecans or walnuts
  • Optional: sea salt flakes for sprinkling

Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat, stirring often until it foams and then browns with little brown specks, smelling nutty and toasty. Remove from heat and pour into a mixing bowl. Let cool about 5 minutes until warm but not hot.
  2. Mix wet ingredients: Whisk brown sugar into the browned butter until combined. Add eggs one at a time, whisking after each, then whisk in vanilla extract until glossy and thick.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Sifting is optional.
  4. Fold dry ingredients into wet: Gradually add dry ingredients to wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  5. Add chocolate chunks and nuts (if using): Fold evenly into the batter.
  6. Bake: Pour batter into a parchment-lined 9×13-inch baking pan and spread evenly. Optionally sprinkle extra chocolate chunks and sea salt flakes on top. Bake at 350°F (175°C) for 25 to 30 minutes, until edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  7. Cool and serve: Let blondies cool completely in the pan on a wire rack before slicing. Warm slices slightly in the microwave if desired.

Notes

Use medium heat to brown butter slowly and avoid burning. Line pan with parchment paper for easy removal. Do not overmix batter to keep blondies tender. Pull blondies out when center is just set but still soft to avoid dryness. Store in airtight container at room temperature up to 3 days. Reheat briefly for melty chocolate.
