  • 1 medium red onion, cut into 1-inch chunks
  • 1216 wooden skewers, soaked in water for 30 minutes
  • 1/4 cup Dijon mustard
  • 1/2 cup mayonnaise
  • 3 tablespoons honey
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup crumbled feta cheese
  • Optional: Fresh parsley or thyme for garnish

Instructions

  1. Soak wooden skewers in warm water for 30 minutes to prevent burning. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash and dry bell peppers, removing stems and seeds. Slice into 1-inch pieces. Slice red onion into 1-inch chunks. Slice smoked sausage into 1-inch thick rounds.
  3. Thread ingredients onto skewers in an alternating pattern (pepper, sausage, onion), leaving space between pieces for even cooking. Aim for 4-5 pieces per skewer.
  4. Place skewers on the prepared baking sheet, ensuring they are not touching. Bake for 15-20 minutes, flipping halfway through, until peppers are tender-crisp and sausage is browned.
  5. While skewers bake, whisk together Dijon mustard, mayonnaise, honey, apple cider vinegar, garlic powder, and black pepper in a small bowl until smooth and creamy.
  6. Remove skewers from oven and serve warm with the honey mustard dip on the side. Garnish with fresh herbs if desired.
