  • 1.5 lbs baby potatoes
  • 6 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons butter, melted
  • 1.5 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 lemon, cut into wedges

Instructions

  1. Preheat oven to 425°F (220°C). Line a large 18×13 inch sheet pan with foil or parchment paper.
  2. Wash potatoes; cut medium/large ones in half or quarters to ensure uniform size. Toss with 2 tablespoons olive oil, half the herbs, half the garlic, salt, and pepper. Spread in a single layer on the pan.
  3. Pat chicken breasts dry. Season with salt, pepper, and remaining herbs. Place on the pan nestled between potatoes, ensuring they are not touching.
  4. In a small bowl, mix remaining 1 tablespoon olive oil, melted butter, and remaining minced garlic.
  5. Roast for 10 minutes. Remove pan, drizzle garlic-butter mixture over chicken and potatoes. Flip chicken and toss potatoes.
  6. Return to oven and roast for another 10-15 minutes until chicken reaches 165°F internally and potatoes are fork-tender and golden.
  7. Remove from oven and let chicken rest for 5 minutes before cutting. Serve with lemon wedges.

Notes

Do not crowd the pan; use two pans if necessary to ensure potatoes roast instead of steam. Add garlic halfway through cooking to prevent burning. Chicken breasts continue cooking after removal; pull at 160°F for perfect doneness. For extra crispiness, broil for the last 2 minutes.
