Instructions

  1. Pat chicken thighs dry and cut into 1-inch cubes. Toss in a bowl with minced garlic, cumin, chili powder, salt, and a drizzle of olive oil. Let sit while prepping other ingredients.
  2. In a small bowl, combine diced yellow onion with the juice of one lime and a pinch of salt. Stir and set aside to quick-pickle.
  3. Heat a large skillet over medium-high heat with a tablespoon of oil. Add chicken in a single layer (cook in batches if necessary) to ensure proper charring. Cook undisturbed for 2-3 minutes until golden brown, then flip and cook for another 3-4 minutes until opaque and cooked through. Remove from pan.
