Description
A beginner-friendly, one-bowl cast iron skillet cornbread with a crispy, caramelized crust and tender center, served with a sweet and savory honey butter.
Ingredients
Scale
- 1 cup (140g) yellow cornmeal (medium grind)
- 1/2 cup (60g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons granulated sugar
- 2 large eggs (room temperature)
- 1 cup (240ml) milk (whole milk or buttermilk)
- 1/4 cup (55g) melted butter
- 1/2 cup (115g) softened butter (for honey butter)
- 3 tablespoons honey (for honey butter)
- Pinch of salt (for honey butter)
- Optional: Paprika or chili flakes (for honey butter)
Instructions
- Preheat oven to 400°F (200°C). Place a 9-inch cast iron skillet in the oven to preheat for at least 10 minutes.
- In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar until no lumps remain.
- In a medium bowl, whisk eggs, milk, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined. Do not overmix; the batter should be thick and lumpy.
- Carefully remove the hot skillet from the oven using oven mitts. Pour in the batter (it will sizzle).
- Bake for 20-25 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- While baking, mix softened butter, honey, and a pinch of salt in a small bowl until smooth and spreadable.
- Remove cornbread from oven and let cool in the skillet for 5 minutes.
- Spread honey butter generously over the warm cornbread. Slice and serve.
Notes
Preheating the skillet is crucial for a crispy crust. Do not overmix the batter to avoid tough cornbread. Let the cornbread cool for 5 minutes before slicing to prevent crumbling. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Reheat in the oven to restore crispiness.
