A beginner-friendly, one-pan paleo breakfast hash featuring crispy sweet potatoes, savory bacon, and aromatic spices. It is grain-free, dairy-free, and ready in about 20 minutes.
Ingredients
- 2 medium sweet potatoes (about 600g), diced into ½-inch cubes
- 6–8 strips thick-cut bacon
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 large red bell pepper, diced
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- 4–6 large eggs (for serving)
- 1 tablespoon avocado oil or coconut oil (optional, if bacon fat is insufficient)
- 2 tablespoons fresh parsley or chives, chopped (for garnish)
Instructions
- Prep ingredients: Dice sweet potatoes, onion, and bell pepper into uniform ½-inch cubes. Mince garlic and measure spices.
- Cook bacon: Place bacon in a cold large skillet (preferably cast iron). Turn heat to medium. Cook until crispy, about 8-10 minutes. Remove bacon with tongs and place on a paper towel-lined plate, leaving the rendered fat in the pan.
- Sauté vegetables: Add diced sweet potatoes to the hot bacon fat in a single layer. Let cook undisturbed for 3-4 minutes to form a crust. Toss, then add onion and bell pepper. Cook for another 4-5 minutes, stirring occasionally, until potatoes are tender and browned.
- Add flavor: Add minced garlic, paprika, garlic powder, onion powder, salt, and pepper. Stir and cook for 1 minute until fragrant.
- Combine: Crumble cooked bacon back into the skillet. Toss with potatoes and vegetables. Taste and adjust salt if needed.
- Serve: Serve immediately topped with fresh herbs. Optionally, make wells in the hash and crack eggs into them, covering the pan to fry in residual heat, or serve with scrambled eggs on the side.

Ensure sweet potatoes are cut into uniform ½-inch cubes for even cooking. Do not crowd the pan; cook in batches if necessary to ensure crispiness. If potatoes are still hard after 10 minutes, cover with a lid for 2-3 minutes to steam, then uncover to crisp. Add garlic at the very end to prevent burning. For extra crunch, sprinkle a tiny bit of almond or coconut flour in the last minute of cooking.
