  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. In a large mixing bowl, peel and mash the ripe bananas with a fork until mostly smooth.
  3. Add the oil, sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. Add the flour, baking soda, and salt to the wet mixture. Stir gently until just combined; do not overmix.
  5. Fold in the chocolate chips (and nuts if using).
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas with black skins for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough texture. Toss chocolate chips in a teaspoon of flour before adding to prevent them from sinking. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
