  • 1 cup (110g) fine almond flour
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated white sugar
  • 2 large eggs, room temperature
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 1 tsp pure vanilla extract
  • ½ cup sliced almonds, toasted
  • 23 tablespoons milk or almond milk
  • 1 tbsp honey or maple syrup (optional, for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Toast sliced almonds in a small skillet over medium heat for 2-3 minutes until golden and fragrant. Remove immediately to cool, then chop roughly if needed.
  3. In a medium bowl, whisk together almond flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat softened butter and sugar until light and fluffy (2-3 minutes).
  5. Add almond butter, eggs, and vanilla extract to the butter mixture. Beat until smooth.
  6. Gradually add dry ingredients to wet ingredients, mixing gently. Add milk one tablespoon at a time until batter is smooth. Do not overmix.
  7. Stir in half of the toasted almonds into the batter. Pour into prepared pan and smooth top. Sprinkle remaining almonds evenly over the top.
  8. Bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
