Ingredients
- 1¾ cups (220g) all-purpose flour
- ¾ cup (75g) unsweetened cocoa powder (preferably Dutch-process)
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 1¾ cups (350g) granulated sugar
- 1 cup (240ml) buttermilk
- ½ cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 2 tablespoons espresso powder (instant espresso powder preferred)
- 1 teaspoon vanilla extract
- 1 cup (240ml) hot water
- For the Ganache:
- ¾ cup (180ml) heavy cream
- 8 oz (225g) bittersweet or semi-sweet chocolate chips
- 2 tablespoons (28g) butter
Instructions
- Prep Your Ingredients (10 minutes): Sift together the flour, cocoa powder, baking soda, and salt into a large bowl. In a separate bowl, whisk the sugar, eggs, oil, buttermilk, vanilla, and espresso powder until smooth. Bring the hot water to a boil and stir in the espresso powder until dissolved. Set aside.
- Combine Wet and Dry Ingredients (3-4 minutes): Slowly add the wet mixture into the dry ingredients, stirring gently with a spatula until combined and smooth. Stir in the hot espresso water carefully. The batter will be thin.
- Bake the Cake (30-35 minutes): Pour the batter evenly into a greased and parchment-lined 9×13-inch baking pan. Bake at 350°F (175°C) for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking.
- Make the Ganache (10 minutes): Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir gently until smooth and glossy. Stir in the butter until fully melted.
- Frost the Cake: Pour the ganache evenly over the warm cake and smooth with a spatula. Let the cake cool completely so the ganache firms but remains soft.
