- 3 medium ripe bananas, mashed (about 1 ½ cups)
- ½ cup unsweetened cocoa powder (50g)
- 1 ½ cups all-purpose flour (190g)
- 1 teaspoon baking soda
- ¾ cup granulated sugar (150g)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan or line it with parchment paper.
- Mash the bananas in a large mixing bowl until mostly smooth but still a bit chunky.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and sugar.
- Pour the dry ingredients into the mashed bananas. Fold gently with a spatula or wooden spoon until just combined. Do not overmix.
- If desired, fold in optional mix-ins such as ½ cup chopped walnuts, ¾ cup chocolate chips, or dried cherries.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Use very ripe bananas for maximum sweetness and moisture. Do not overmix the batter to keep the bread tender. Start checking doneness at 50 minutes to avoid overbaking. Line the pan with parchment paper for easy removal. Store wrapped tightly at room temperature for up to 3 days or freeze slices for up to 3 months.
