Description

A quick, 15-minute recipe for creamy chicken salad served on buttery mini croissants. Perfect for lunches, picnics, or using up rotisserie chicken leftovers.


Ingredients

  • 3 cups shredded rotisserie chicken (about 450g)
  • 1/2 cup full-fat mayonnaise
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1215 mini croissants
  • 1 cup arugula or mixed greens
  • 1/2 cup cherry tomatoes, halved (optional)

Instructions

  1. Pull meat off rotisserie chicken bones and chop into bite-sized pieces. Place in a large mixing bowl.
  2. Finely dice the celery and red onion. If the onion is too strong, soak in cold water for 5 minutes, then drain and pat dry.
  3. Add mayonnaise, diced celery, red onion, chopped dill, lemon juice, garlic powder, salt, and pepper to the chicken.
  4. Stir gently until well combined. The mixture should be creamy but not soupy. Adjust seasoning to taste.
  5. For best flavor, refrigerate the chicken salad for 10 minutes to firm up the mayo.
  6. Slice mini croissants in half horizontally. Optionally toast them at 350°F (175°C) for 2-3 minutes for crispiness.
  7. Scoop a generous tablespoon of chicken salad onto the bottom half of each croissant.
  8. Top with arugula leaves and/or cherry tomato halves.
  9. Cap with the top half of the croissant and press down gently.
  10. Serve immediately.

Notes

Do not assemble sandwiches until ready to eat to prevent soggy croissants. Chicken salad can be stored in an airtight container in the fridge for up to 3 days. Do not freeze the chicken salad as the mayo will separate. For a lighter version, use less mayo and add more celery. For a spicy kick, add cayenne pepper or hot sauce.
