- 1 ½ pounds (680g) Brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon, chopped
- 2 tablespoons (30ml) real maple syrup
- 2 tablespoons (30ml) extra virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon garlic powder (optional)
- Fresh lemon juice (optional, for finishing)
Instructions
- Preheat oven to 400°F (200°C). Trim the Brussels sprouts by slicing off dry ends and removing damaged outer leaves. Cut each sprout in half lengthwise. Chop the bacon into bite-sized pieces.
- In a large mixing bowl, combine halved Brussels sprouts, chopped bacon, olive oil, maple syrup, salt, pepper, and optional garlic powder. Toss until sprouts are evenly coated.
- Spread mixture in a single layer on a rimmed baking sheet with cut side down. Roast for 10-12 minutes.
- Use tongs to flip the sprouts and stir the bacon. Roast for another 10-13 minutes until sprouts are tender inside and crispy on edges, and bacon is browned.
- Give everything a final toss, transfer to a serving dish, and optionally squeeze fresh lemon juice over the top. Serve immediately while warm and crispy.
Notes
Do not overcrowd the pan to ensure sprouts roast instead of steam. Use real maple syrup for authentic flavor. Flip halfway through roasting for even crispiness. Leftovers reheat best in a skillet to maintain crispiness. Avoid freezing as texture changes after thawing.
