Description
A juicy, foolproof pork loin roast wrapped in thick-cut bacon and coated in a sweet and savory maple glaze. This easy family favorite is perfect for holidays or weeknight dinners.

- 3–4 pounds pork loin roast (center-cut)
- 1.5–2 pounds thick-cut bacon
- 1 tablespoon black pepper (freshly cracked)
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 cup real maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce (low-sodium)
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Remove pork loin from fridge and let sit at room temperature for 20-30 minutes. Pat dry with paper towels.
- Season the entire roast generously with salt, pepper, and garlic powder, rubbing it in evenly.
- Lay out bacon strips slightly overlapping. Wrap the bacon around the roast, covering the entire surface area. Tuck ends under if necessary.
- In a small saucepan, combine maple syrup, Dijon mustard, soy sauce, thyme, and red pepper flakes. Heat over medium heat until combined and fluid.
- Preheat oven to 375°F (190°C). Place the bacon-wrapped roast in a roasting pan.
- Brush the top generously with half of the maple glaze.
- Roast for 30 minutes.
- Remove from oven and brush on the remaining glaze.
- Return to oven and roast for another 20-25 minutes, or until internal temperature reaches 145°F (63°C).
- Remove from oven, cover loosely with foil, and let rest for 10 minutes before slicing.
- Slice into 1/2-inch to 1-inch thick slices and serve.
Notes
Use thick-cut bacon to prevent burning. Do not skip the resting period, as it ensures the meat remains juicy. Split the glaze application: half at the start to help browning, half at the end to prevent burning. Trim excess hard fat from the pork loin before wrapping.
