- 2 pounds jumbo shrimp, peeled and deveined
- 2 lemons (zest and juice)
- 4 cloves garlic, minced (for marinade)
- 1 tablespoon freshly cracked black pepper
- 1/2 teaspoon red pepper flakes
- 3 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced (for butter)
- 2 tablespoons fresh parsley, chopped
- 8–10 bamboo or wooden skewers
Instructions
- Soak wooden skewers in water for at least 20 minutes to prevent burning.
- In a medium bowl, whisk together olive oil, lemon zest, lemon juice, 4 cloves minced garlic, black pepper, red pepper flakes, and salt.
- Add shrimp to the marinade, toss to coat evenly, cover, and refrigerate for 15-30 minutes.
- Thread 4-5 shrimp onto each skewer, leaving the tail tip exposed.
- Melt butter in a small saucepan over low heat, add 2 cloves minced garlic, and stir until fragrant (do not brown). Remove from heat.
- Preheat grill to medium-high heat (approx. 400°F) and oil the grates.
- Grill skewers for 2-3 minutes per side, turning once, until shrimp are opaque, pink, and form a loose ‘C’ shape.
- Brush skewers with the garlic butter mixture during the last few minutes of grilling.
- Serve immediately, garnished with fresh parsley and lemon wedges.
Notes
Do not marinate shrimp for more than an hour as the acid can make them mushy. Ensure grates are clean and oiled to prevent sticking. Shrimp are done at 120°F internal temperature or when they form a loose ‘C’ shape. For dairy-free, substitute butter with olive oil.
