Description

Ingredients

  • 1/2 cup (50g) finely ground almond flour
  • 2 oz (56g) full-fat block cream cheese, softened
  • 1/4 cup (25-30g) erythritol or monk fruit blend (1:1 baking blend)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup (40g) sugar-free chocolate chips (mini recommended)

Instructions

  1. Ensure butter and cream cheese are softened to room temperature but not melted.
  2. In a medium mixing bowl, mash the softened butter and cream cheese together with a fork or spatula until completely smooth and creamy (approx. 2-3 minutes).
  3. Add the sweetener blend and vanilla extract. Mix until well combined. Taste and adjust sweetness if desired.
  4. Add the almond flour and salt. Stir until a dough forms. If too dry, add a teaspoon of softened butter; if too sticky, add more almond flour. The consistency should resemble Play-Doh.
  5. Fold in the sugar-free chocolate chips, ensuring they are evenly distributed throughout the dough.
  6. Line a plate or baking sheet with parchment paper. Scoop small portions of dough (about 1 teaspoon each) and roll into balls between your palms.
  7. Place the balls on the lined plate and freeze for at least 15-30 minutes until rock hard.
  8. Transfer frozen fat bombs to an airtight container for storage.

Notes

Keep hands cool while rolling to prevent the butter from melting. If dough is crumbly, ensure fats were creamed sufficiently or add a teaspoon of water/butter. Use allulose-based chocolate chips for a softer texture, as erythritol-based chips can become very hard when frozen.
