  • 1.5 pounds Italian sausage (sweet or hot)
  • 3 large bell peppers (any color), cut into 1-inch strips
  • 1 large yellow onion, sliced into 1-inch wedges
  • 1 medium red onion, sliced into wedges (optional)
  • 45 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon balsamic vinegar
  • 1 pound small potatoes, quartered (optional)
  • 8 oz cremini mushrooms, sliced (optional)
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line two large rimmed sheet pans with parchment paper or lightly grease with olive oil.
  2. Wash and dry peppers. Remove tops, seeds, and membranes, then slice into 1-inch strips. Slice onions into 1-inch wedges, keeping the root end intact. Mince garlic. If using potatoes, quarter them.
  3. Place sliced peppers, onions, and potatoes (if using) into large mixing bowls. Drizzle with 2 tablespoons of olive oil. Sprinkle with 1/2 teaspoon dried oregano, 1/2 teaspoon dried basil, salt, and pepper. Toss until evenly coated.
  4. Prick sausage links with a fork in a few places to prevent bursting. Place sausage links on the sheet pans, spaced apart to allow for browning.
  5. Roast in the oven for 20-25 minutes. Halfway through (around 10-12 minutes), flip the sausage links and stir the vegetables to ensure even cooking.
  6. In the last 5 minutes of cooking, sprinkle the minced garlic over the vegetables to prevent burning.
  7. Remove pans from the oven. Drizzle with balsamic vinegar and toss gently to combine. The residual heat will warm the vinegar.
  8. Let sausage rest for 5 minutes before serving. Serve immediately, optionally topped with crumbled feta cheese.

Notes

Do not crowd the pan; vegetables need space to roast rather than steam. If you only have one pan, cook in two batches. Pricking the sausage helps fat render and prevents splitting. Add garlic late in the cooking process to avoid burning. Sausage should reach an internal temperature of 160°F.
