- ¼ teaspoon freshly ground black pepper
- 1 teaspoon apple cider vinegar

Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- In a large mixing bowl, whisk together melted butter, honey, maple syrup, minced garlic, chopped thyme, salt, and black pepper.
- Add the prepared carrots to the bowl and toss until evenly coated in the glaze.
- Spread carrots in a single layer on the baking sheet, ensuring they are not crowded.
- Roast for 20 minutes.
- Remove from oven, flip carrots, and optionally brush with extra glaze.
- Return to oven and roast for another 5-10 minutes until tender and caramelized.
- Remove from oven and immediately drizzle with apple cider vinegar. Toss gently to distribute.
- Taste and adjust salt if needed. Serve warm.
