Description

A quick, no-cook chicken salad made with rotisserie chicken, Greek yogurt, red grapes, and walnuts. It’s high in protein, low in guilt, and perfect for meal prep.


Ingredients

  • 3 cups shredded rotisserie chicken (about 450g)
  • 1 cup red grapes, halved (about 150g)
  • 2 stalks celery, diced (about 100g)
  • ½ cup walnuts, chopped (about 60g)
  • ½ cup full-fat plain Greek yogurt (120g)
  • 2 tablespoons mayonnaise (30g)
  • 1 tablespoon honey (20g)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice (15ml)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • Black pepper (to taste)
  • 2 tablespoons fresh dill or parsley, chopped (optional)

Instructions

  1. Shred the rotisserie chicken and place it in a large mixing bowl.
  2. Wash and thoroughly dry the grapes, then cut them in half.
  3. Dice the celery and finely chop the walnuts and fresh herbs (if using). Add these to the bowl with the chicken.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, honey, Dijon mustard, lemon juice, garlic powder, salt, and pepper until smooth.
  5. Pour the dressing over the chicken and grape mixture.
  6. Gently fold everything together until the chicken is coated and grapes are glistening, being careful not to crush the grapes.
  7. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.

Notes

Ensure grapes and celery are thoroughly dried after washing to prevent a watery salad. Toasting walnuts enhances their flavor. The salad tastes better after chilling for 30 minutes. Do not freeze, as the texture of celery and yogurt will suffer. Store in an airtight container in the fridge for up to 4 days.
