Description

A practical, high-protein breakfast bar made with rolled oats, almond butter, and protein powder. These bars are batch-friendly, freezer-proof, and designed to keep you full until lunch.


Ingredients

  • 2 cups (160g) old-fashioned rolled oats
  • 1 scoop (30g) vanilla protein powder (whey or plant-based)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon fine sea salt
  • ½ cup (128g) creamy almond butter
  • 2 large eggs
  • ¾ cup (180ml) milk (dairy or plant-based)
  • ¼ cup (60ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (140g) blueberries (fresh or frozen)
  • ¼ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. In a large mixing bowl, whisk together the oats, protein powder, baking powder, cinnamon, and salt until no clumps remain.
  3. In a separate bowl, whisk the almond butter, eggs, milk, honey (or maple syrup), and vanilla extract. Microwave the almond butter for 15 seconds to soften if necessary, then whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Fold in the blueberries and chocolate chips (if using).
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let the bars cool completely in the pan on a wire rack (at least 1 hour) to firm up before cutting.
  7. Lift the block out of the pan using the parchment overhang and slice into 12 bars.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. Frozen blueberries are recommended to prevent sinking and bleeding. Ensure almond butter is softened before mixing. Bars must cool completely before cutting to prevent crumbling. Store in the fridge for up to 5 days or freeze for up to 3 months.
