Description

A simple, elegant summer salad featuring charred peaches, creamy burrata, and fresh basil oil. This beginner-proof dish looks fancy but is incredibly easy to make, requiring only a few ingredients and about 15 minutes of total time.


Ingredients

  • 4 large ripe peaches, halved and pitted
  • 2 balls burrata cheese (about 8 ounces each)
  • 1 large bunch fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon sherry vinegar or balsamic glaze
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Make the basil oil: Blend 1 cup of fresh basil leaves with 1/2 cup of extra virgin olive oil until smooth. Add a pinch of salt if desired and set aside.
  2. Prep the peaches: Wash and pat dry peaches. Cut in half around the seam, twist to remove pits, and lightly brush cut sides with olive oil. Sprinkle with a tiny pinch of salt.
  3. Grill the peaches: Preheat grill or grill pan to medium-high heat. Place peaches cut-side down and grill for 2-3 minutes without moving to get char marks. Flip and grill for 1 more minute. Remove and let cool slightly.
  4. Assemble the salad: Tear burrata into rustic chunks and arrange on a serving platter. Place grilled peach halves around and on top of the cheese.
  5. Dress and serve: Drizzle generously with basil oil and add a splash of sherry vinegar or balsamic glaze. Finish with black pepper and flaky sea salt. Serve immediately.

Notes

Use ripe peaches that yield slightly to pressure for best flavor. Burrata is delicate; handle gently and ensure it is fresh. Basil oil can be made ahead and stored in the fridge for up to 3 days. Do not freeze this salad as the texture of the burrata will change. If you don’t have a grill, a hot cast-iron skillet works well.
