Description
A simple, beginner-proof side dish featuring crispy on the outside and fluffy on the inside roasted potatoes seasoned with garlic, fresh herbs, parmesan cheese, and bright lemon zest.

- 2 pounds Yukon Gold potatoes (or Russet), washed and cut into 1-inch chunks
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary and thyme combined, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1 medium lemon (zest only)
Instructions
- Preheat oven to 400°F (200°C).
- Wash potatoes thoroughly and pat dry. Cut into 1-inch chunks.
- Place potato chunks in a large bowl. Drizzle with olive oil and sprinkle with salt, pepper, minced garlic, and chopped herbs.
- Toss until every piece is coated and shiny.
- Spread potatoes in a single layer on a large sheet pan lined with parchment paper or a bare pan. Do not overcrowd.
- Roast for 25 minutes without touching them for the first 15 minutes.
- Remove from oven. Sprinkle grated Parmesan cheese over the potatoes.
- Return to oven for 2-3 minutes until cheese melts and bubbles.
- Remove from oven and immediately sprinkle with lemon zest. Toss gently and serve immediately.
Notes
Ensure potatoes are in a single layer to avoid steaming. Dry potatoes well before oiling for maximum crispiness. Use fresh herbs for best flavor. Do not use lemon juice as it makes potatoes soggy; use zest only. Reheat in oven or air fryer to restore crispiness.
