Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Melt the butter gently in a microwave-safe bowl or on the stove.
  3. In a large mixing bowl, whisk together melted butter and sugar until combined and slightly glossy.
  4. Add eggs one at a time, whisking until smooth. Stir in peppermint extract.
  5. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  6. Gently fold dry ingredients into wet mixture with a rubber spatula until no flour streaks remain. Fold in optional chocolate chips or crushed peppermint candies if desired.
