Description
A creamy, spicy, and no-fail buffalo chicken dip perfect for tailgating or game day. This easy recipe uses simple ingredients like cream cheese, rotisserie chicken, and blue cheese to create a flavorful dip that stays warm and delicious for hours.
Ingredients
Scale
- 8 ounces cream cheese, softened
- 2 cups shredded chicken (rotisserie recommended)
- 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
- 1/2 cup blue cheese dressing
- 1/2 cup blue cheese crumbles
- 1 cup sharp cheddar cheese, shredded
- 1 packet ranch seasoning (0.7 ounces)
- 2–3 stalks green onions, sliced (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) if using the oven method. Ensure cream cheese is softened to room temperature.
- In a large mixing bowl, combine the softened cream cheese, buffalo sauce, blue cheese dressing, ranch seasoning packet, and shredded chicken. Stir until well combined and no large streaks of cream cheese remain.
- Transfer the mixture to a 9×9 inch baking dish or slow cooker insert. Spread evenly and press down gently to flatten the top.
- Sprinkle the shredded cheddar cheese and extra blue cheese crumbles evenly over the top.
- For Oven Method: Bake for 20-25 minutes until bubbly around the edges and cheese is melted and slightly golden. Optionally cover with foil for the first 15 minutes to prevent burning.
- For Slow Cooker Method: Cook on low for 2-3 hours, stirring once halfway through. Do not cook on high.
- Garnish with sliced green onions and serve immediately with tortilla chips, celery sticks, or crusty bread.
Notes
Ensure cream cheese is fully softened to avoid lumps. Grate your own cheddar cheese for better melting. If the dip is too spicy, add more cream cheese or sour cream. If too runny, let it cool for 5 minutes to thicken. This dip does not freeze well due to dairy separation.
