  • 3 to 4 pounds boneless, skinless chicken breasts
  • 1.5 cups buffalo sauce (e.g., Frank’s RedHot)
  • ¼ cup melted butter
  • 1 teaspoon garlic powder
  • 12 to 24 Hawaiian sweet rolls
  • 2 cups shredded cheddar cheese
  • ½ cup blue cheese dressing
  • 2 tablespoons melted butter (for brushing)
  • Optional: Extra hot sauce, celery, carrots

Instructions

  1. In a medium bowl, whisk together the buffalo sauce, melted butter, and garlic powder.
  2. Place chicken breasts in the bottom of a slow cooker. Pour the buffalo sauce mixture over the chicken, ensuring it is coated.
  3. Cover and cook on LOW for 6 hours or HIGH for 3-4 hours until chicken shreds easily and reaches 165°F.
  4. Transfer chicken to a large bowl and shred using two forks or a hand mixer. Discard excess liquid or reserve for moisture.
  5. Toss shredded chicken back into the slow cooker with remaining sauce. Keep warm on ‘Warm’ setting.
  6. Preheat oven to 350°F (175°C). Slice Hawaiian rolls in half horizontally, keeping them attached as one slab.
  7. Place the bottom half of the rolls on a baking sheet or 9×13 dish. Divide buffalo chicken mixture evenly over the buns.
  8. Sprinkle shredded cheddar cheese generously over the chicken.
  9. Mix the 2 tablespoons of melted butter with a pinch of garlic powder and brush over the top half of the rolls.
  10. Bake for 3-5 minutes until cheese is melted and tops are golden brown. Watch closely to prevent burning.
  11. Let cool for 2-3 minutes, slice between roll halves, and serve warm with blue cheese dressing and celery.

Notes

You can cook from frozen by adding an extra hour to the cook time. For a creamy version, stir ½ cup cream cheese into the buffalo sauce. To reduce watery sauce, cook uncovered for the last 30 minutes. Do not freeze assembled sliders as buns will get soggy; freeze chicken mixture only.
