Description

A homemade version of popular coffee shop egg bites, featuring a fluffy, custard-like texture with savory spinach and salty feta cheese. These are easy to make, budget-friendly, and perfect for meal prep.


Ingredients

  • 4 large eggs, room temperature
  • ½ cup (120ml) heavy cream
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup (60g) crumbled feta cheese (from a block)
  • 1 cup chopped fresh spinach OR ½ cup frozen spinach, thawed and squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon nutritional yeast (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Line a 12-cup silicone muffin pan or grease a metal muffin tin generously with butter or oil.
  2. If using fresh spinach, wash and chop finely. If using frozen spinach, thaw completely and squeeze out all excess moisture using a clean kitchen towel or paper towels.
  3. In a medium mixing bowl, crack the eggs. Add heavy cream, salt, and pepper. Whisk vigorously until the mixture is smooth and slightly frothy.
  4. Add the chopped spinach, crumbled feta, and minced garlic to the egg mixture. Stir gently to distribute ingredients evenly.
  5. Pour the egg mixture into the prepared muffin cups, filling each about ¾ full. Ensure spinach and feta are distributed evenly among the cups.
  6. Bake for 25-30 minutes until edges are set and slightly golden, and centers are just barely jiggly. Do not overbake.
  7. Let cool in the pan for 5 minutes to firm up, then gently remove from the cups.

Notes

Squeezing the spinach dry is critical to prevent watery egg bites. Use block feta and crumble it yourself to avoid grainy texture from anti-caking agents. For best results, use room temperature eggs. These store well in the fridge for up to 5 days.
