  • 1 cup blueberries (fresh or frozen)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until no clumps remain.
  2. In a separate large bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. The batter should be lumpy; do not overmix.
  4. Gently fold the blueberries into the batter using a spatula.
  5. Heat a non-stick skillet or griddle over medium heat. Test readiness by flicking water drops onto the surface; they should bead up and dance.
  6. Lightly grease the pan with butter or oil.
  7. Pour about ¼ cup of batter onto the pan for each pancake.
  8. Cook for 2-3 minutes until bubbles form on the surface and pop, leaving holes that don’t fill back in. The edges should look set.
  9. Flip carefully and cook the other side for 1-2 minutes until golden brown and springy to the touch.
  10. Serve immediately with maple syrup and butter.

Notes

Do not overmix the batter; lumps are good and ensure fluffiness. Use frozen blueberries to prevent sinking. Keep cooked pancakes warm in a 200°F oven on a wire rack. Leftovers can be stored in the fridge for 3 days or frozen for up to 2 months.
