  • 3 tablespoons real maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chopped fresh sage leaves (optional)
  • ¼ cup chopped pecans or walnuts (optional)
  • ¼ cup crumbled feta or goat cheese (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Rinse the delicata squash under cold water and pat dry. Slice off the top and bottom stems so the squash sits flat.
  3. Slice the squash crosswise into ½-inch thick rings.
  4. Use a spoon to scoop out the seeds and stringy pulp from the center of each ring.
  5. In a small bowl, whisk together maple syrup, balsamic vinegar, olive oil, salt, pepper, and chopped sage.
  6. Place squash rings on the prepared baking sheet. Drizzle with glaze and toss to coat evenly.
  7. Arrange squash in a single layer with space between pieces to ensure roasting rather than steaming.
  8. Roast for 15-18 minutes, flipping halfway through, until edges are caramelized and flesh is tender.
  9. Remove from oven, let cool for 2 minutes, and serve warm.

Notes

Ensure squash is in a single layer to prevent steaming. Use real maple syrup for best flavor. If squash is hard to cut, microwave for 1-2 minutes to soften. Seeds can be saved and roasted separately. Does not freeze well.
