Instructions

  1. Pour 2 cups of apple cider into a saucepan and bring to a boil over medium-high heat.
  2. Reduce heat to medium-low and simmer until the cider reduces by half (about 1 cup of thick syrup), approximately 15-20 minutes. Remove from heat and let cool slightly.
  3. Whisk together the flour, baking powder, and ½ teaspoon salt in a medium bowl.
  4. In a large bowl, whisk the reduced warm cider, melted butter, egg, and vanilla extract.
  5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Heat 1 inch of oil in a skillet or Dutch oven to 350°F (175°C).
  7. Drop spoonfuls of batter into the hot oil, frying 2-3 at a time for 1-2 minutes per side until golden brown and puffy.
  8. Remove doughnuts with a slotted spoon or tongs and drain on paper towels.
  9. While still warm, roll the doughnuts in the mixture of granulated sugar, cinnamon, and pinch of salt.

Notes

Reduce the cider to concentrate flavor. Do not overmix the batter to ensure tender doughnuts. Roll in sugar while warm for best adhesion. If you don’t have a thermometer, test oil by dropping a small bit of batter; it should sizzle and float.
