- 3 medium apples (about 600g), diced (Honeycrisp and Granny Smith recommended)
- 2 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- Pinch of salt
- 3 large eggs, room temperature
- ¾ cup all-purpose flour
- ¾ cup whole milk
- 1 teaspoon vanilla extract
- Pinch of nutmeg
- 1 teaspoon butter (for skillet)
- Maple syrup, whipped cream, or cinnamon sugar for serving (optional)
Instructions
- Preheat oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven to preheat for 15-20 minutes.
- In a small skillet over medium heat, melt 2 tablespoons of butter. Add diced apples, sugar, cinnamon, and salt. Cook for 5-7 minutes until apples are tender and liquid has thickened into a syrup. Remove from heat.
- In a blender, combine eggs, milk, vanilla, nutmeg, salt, and flour. Blend on high for 30-45 seconds until completely smooth.
- Carefully remove the hot skillet from the oven. Add 1 teaspoon of butter and swirl to coat the bottom.
- Pour the caramelized apples into the center of the hot skillet, then carefully pour the batter over the apples.
- Return the skillet to the oven immediately. Bake for 20-22 minutes without opening the oven door for the first 15 minutes.
- The Dutch Baby is done when edges are deep golden brown and the center is set but slightly jiggly.
- Remove from oven and serve immediately, sliced into wedges with toppings of choice.
Notes
The skillet must be screaming hot to ensure the Dutch Baby puffs up. Do not open the oven door for the first 15 minutes of baking to prevent deflation. Serve immediately as it loses crispness quickly. Room temperature eggs help create a smoother batter.
