  • 1/2 cup (120ml) vegetable oil
  • 1 cup (240ml) water
  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 3 large eggs
  • 1 small box (3.9 oz) butterscotch pudding mix
  • 1 cup (240ml) half-and-half or milk
  • 1 cup (240ml) whipped cream
  • 1/2 cup chopped pecans
  • Sea salt flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, pumpkin puree, oil, water, eggs, cinnamon, ginger, nutmeg, and cloves. Beat on medium speed for 2-3 minutes until smooth.
  3. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is still warm (not piping hot), use a fork to poke holes all over the surface, about an inch apart.
  5. In a medium bowl, whisk together butterscotch pudding mix and half-and-half (or milk) until smooth and thickened.
  6. Pour the butterscotch mixture evenly over the warm cake, using a spatula to help it fill the holes.
  7. Refrigerate the cake for at least 1-2 hours to allow the filling to set.
  8. Spread whipped cream evenly over the chilled cake.
  9. Sprinkle with chopped pecans and sea salt flakes. Slice and serve.

Notes

Ensure the cake is warm, not hot, when poking holes to allow the filling to soak in properly. Do not use pumpkin pie filling; use 100% pure pumpkin puree. For best flavor, toast pecans before chopping. The cake tastes better the next day as flavors meld.
