  • 1 cup (100g) Unsweetened Cocoa Powder
  • 2 cups (400g) Granulated Sugar
  • 1 ½ teaspoons Baking Powder
  • 1 ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 3 large Eggs (room temperature)
  • ½ cup (120ml) Vegetable Oil
  • 1 cup (240ml) Whole Milk
  • 2 teaspoons Vanilla Extract
  • 1 cup (240ml) Heavy Cream
  • 1 ½ cups (270g) Semi-Sweet Chocolate Chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined and lump-free.
  3. In a separate bowl, whisk together eggs, vegetable oil, milk, and vanilla extract until uniform.
  4. Pour the wet mixture into the dry mixture. Stir gently with a whisk or spatula just until the flour disappears. Do not overmix.
  5. Divide batter evenly between the two prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let cakes cool in pans for 10 minutes, then invert onto a cooling rack to cool completely.
  8. While cakes cool, heat heavy cream in a saucepan over medium heat until it just begins to simmer.
  9. Pour hot cream over chocolate chips in a heat-proof bowl. Let sit for 5 minutes, then stir gently until smooth and glossy.
  10. Place one cake layer on a serving plate. Spread a thin layer of ganache on top as a crumb coat.
  11. Place the second layer on top. Pour remaining ganache over the top, letting it drip down the sides.
  12. Let ganache set for 30 minutes before slicing.

Notes

Ensure eggs are at room temperature for best results. Do not overbake the cake; aim for moist crumbs on the toothpick. The cake must cool completely before frosting to prevent the ganache from melting. Store at room temperature for up to 3 days.
