Description

A creamy, decadent, and dairy-free pumpkin mousse parfait that comes together in just 5 minutes of active time. This light yet indulgent dessert is naturally gluten-free and perfect for busy weeknights or dinner parties.


Ingredients

  • 1 can (400g) full-fat coconut cream, chilled
  • 1 cup (245g) canned pumpkin puree (100% pure, not pie filling)
  • 3 tablespoons maple syrup
  • 1.5 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup (50g) graham cracker crumbs
  • 2 tablespoons pumpkin seeds (pepitas), toasted
  • Optional: Whipped coconut cream for topping
  • Optional: Mini chocolate chips

Instructions

  1. Chill the coconut cream can in the fridge for at least 24 hours or in the freezer for 15-20 minutes until solid.
  2. Open the can and scoop out the solid cream into a mixing bowl, leaving the watery liquid behind.
  3. Using an electric mixer on medium-high speed, whip the coconut cream until light and fluffy (soft peaks), about 2-3 minutes.
  4. Add the pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt to the whipped cream.
  5. Gently fold the ingredients together with a spatula until well combined and uniform in color. Do not stir to avoid deflating the mixture.
  6. Prepare the graham cracker crumbs by crushing crackers or using pre-made crumbs.
  7. In serving glasses or jars, layer the graham cracker crumbs and pumpkin mousse. Repeat for 2-3 layers.
  8. Top with whipped coconut cream (if using), toasted pumpkin seeds, and optional chocolate chips.
  9. Serve immediately or chill in the refrigerator for 30 minutes to let flavors meld.

Notes

Ensure the coconut cream is very cold to whip properly. If the mousse is too thin, chill it longer or add more pumpkin puree. If too thick, add a splash of almond milk. Toasting the pumpkin seeds enhances the flavor. The recipe is naturally gluten-free if using GF graham crackers.
