Description

A quick, impressive, and crispy party dessert made with layers of phyllo dough, melted butter, toasted hazelnuts, and dark chocolate. Ready in 30 minutes with minimal active prep time.

  • 1 package (16 oz / 450g) phyllo dough, thawed in fridge overnight
  • ½ cup (113g) unsalted butter, melted
  • 1 cup (120g) raw hazelnuts, finely chopped and toasted
  • 4 oz (115g) dark chocolate (60-70%), chopped
  • 23 tablespoons powdered sugar, for dusting
  • Sea salt flakes, optional for topping
  • Optional: ½ teaspoon cinnamon, 1 teaspoon orange zest, or chopped pistachios

Instructions

  1. Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. Melt the butter and let it cool slightly. Ensure hazelnuts and chocolate are finely chopped.
  3. Unroll phyllo dough. Keep unused sheets covered with a damp towel to prevent drying.
  4. Lay one sheet of phyllo flat. Brush generously with melted butter. Repeat with 3-4 more sheets, layering and brushing each one.
  5. Spread the chopped hazelnuts and dark chocolate evenly over the layered phyllo, leaving a half-inch border around the edges.
  6. Starting from a long edge, roll the phyllo tightly into a log, tucking in the sides as you go.
  7. Transfer the log to the prepared baking sheet. Slice into 1-inch thick rounds using a serrated knife.
  8. Brush the tops of the rolls with a little more melted butter.
  9. Bake for 15-20 minutes until golden brown and crispy.
  10. Cool on the baking sheet for 5 minutes. Dust with powdered sugar and sea salt if desired. Serve warm or at room temperature.

Notes

Keep phyllo dough covered with a damp towel while working to prevent it from drying out and cracking. Toast hazelnuts in a dry skillet for 5-7 minutes before chopping for enhanced flavor. Use a serrated knife to slice rolls to avoid crushing the layers. Rolls crisp up as they cool; do not eat immediately. Store in an airtight container for up to 3 days or freeze for up to 2 months.
