  • 3 cups cooked chicken, shredded (about 450g)
  • 2 cans (4oz each) diced green chiles, drained
  • 8oz block cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 12 large flour tortillas
  • 1 cup extra shredded cheese (for topping)
  • 1/4 cup fresh cilantro, chopped
  • 2 stalks green onions, sliced
  • 1 can (15oz) black beans, drained (optional)
  • 1 cup cooked rice (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
  2. In a large mixing bowl, combine softened cream cheese and sour cream, mixing until smooth.
  3. Add shredded chicken, drained green chiles, black beans (if using), and spices (cumin, garlic powder, onion powder) to the bowl. Mix well.
  4. Stir in 1.5 cups of the shredded cheese until the mixture is creamy and chunky.
  5. Lay out tortillas and scoop about 1/3 cup of filling onto the center of each. Roll tightly, folding in the sides, and place seam-side down in the baking dish.
  6. Sprinkle the remaining 0.5 cup of shredded cheese evenly over the top of the enchiladas.
  7. Bake uncovered for 25-30 minutes, or until cheese is melted and bubbly and edges are golden.
  8. Remove from oven and let rest for 5 minutes to allow filling to set.
  9. Sprinkle with fresh cilantro and green onions before serving.

Notes

For best results, ensure cream cheese is softened to room temperature to avoid lumps. Drain green chiles well to prevent soggy enchiladas. Let the dish rest for 5 minutes after baking to help it set. These freeze well for up to 3 months.
