- 2 tablespoons all-purpose flour
- 1 tablespoon neutral oil (vegetable or canola)
- 4 tablespoons unsalted butter
- 6–8 cloves garlic, minced
- 1 medium onion, diced (optional)
- 1 cup beef broth (low-sodium)
- 1 teaspoon Worcestershire sauce
- ½ cup heavy cream
- 1 teaspoon dried thyme (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat beef tips completely dry with paper towels and toss with salt, pepper, and flour until lightly coated. Shake off excess flour.
- Heat neutral oil in a large skillet over medium-high heat. Sear beef tips in a single layer (cook in batches if necessary) for 2-3 minutes per side until browned. Remove beef to a plate.
- Reduce heat to medium. Add butter to the same skillet. If using, sauté onion for 1 minute until soft.
- Add minced garlic and cook for 30 seconds until fragrant, stirring constantly to prevent burning.
- Pour in beef broth and Worcestershire sauce, scraping up brown bits from the bottom of the pan. Simmer for 2 minutes. Add thyme if using.
- Reduce heat to low. Slowly pour in heavy cream while stirring. Simmer gently for 2-3 minutes until sauce thickens slightly. Do not boil.
- Return beef tips and any juices to the skillet. Toss to coat in sauce and heat through for 1 minute.
- Adjust seasoning with salt and pepper. Garnish with fresh parsley and serve immediately.

Patting the beef dry is crucial for proper browning. Do not overcrowd the pan when searing to ensure a good crust. When adding cream, keep the heat low to prevent the sauce from breaking or curdling. Leftovers store well in the fridge for up to 3 days; reheat gently in a skillet with a splash of milk or cream.
