A bold, rich, and spicy weeknight dinner that comes together in just 20 minutes. This one-pan wonder features Andouille sausage, shrimp, and a creamy Cajun sauce served over fettuccine.

  • 12 ounces Andouille sausage, sliced into half-moons
  • 1 pound shrimp, peeled and deveined
  • 12 ounces Fettuccine or Penne pasta
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth, low-sodium
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste
  • Olive oil for drizzling (optional)

Instructions

  1. Prep ingredients: Slice sausage, dice onion, mince garlic, and measure spices.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat a large skillet over medium-high heat. Add sliced Andouille sausage and cook for 3-4 minutes until browned and crispy. Remove sausage and set aside.
  4. Reduce heat to medium. Drain excess grease from the pan, leaving about a tablespoon. Add diced onion and cook for 2-3 minutes until softened.
  5. Add minced garlic and Cajun seasoning to the pan. Cook for 1 minute, stirring constantly, until fragrant.
  6. Add shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp and add to the plate with the sausage.
  7. Reduce heat to medium-low. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1 minute.
  8. Add heavy cream and stir well. Simmer gently for 3-4 minutes until the sauce thickens slightly.
  9. Remove skillet from heat. Gradually add grated Parmesan, stirring constantly until melted.
  10. Return the cooked sausage, shrimp, and drained pasta to the skillet. Toss to coat evenly. Add reserved pasta water if the sauce is too thick.
  11. Taste and adjust seasoning. Serve immediately topped with fresh parsley, extra Parmesan, and black pepper.

Notes

Do not overcook the shrimp as they will become rubbery. Save the starchy pasta water to help the sauce cling to the noodles. Use fresh Parmesan cheese for a smoother sauce, as pre-grated cheese contains anti-caking agents. If serving children, reduce the Cajun seasoning or serve a mild portion separately.
