Tender, chewy confetti sugar cookie bars topped with a thick, fluffy vanilla buttercream frosting. This easy one-bowl recipe requires no rolling or cutting and is perfect for parties, birthdays, or meal prep.

- ½ to ¾ cup rainbow sprinkles (jimmies)
- ½ cup (113g) unsalted butter, softened for frosting
- 3 cups (360g) powdered sugar, sifted

- 1 teaspoon vanilla extract for frosting
- ¼ teaspoon salt for frosting
- Extra sprinkles for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- In a large bowl, beat the softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy. Scrape down the sides of the bowl.
- Add eggs one at a time, beating well after each addition. Mix in 2 teaspoons of vanilla extract.
- Reduce mixer speed to low. Add flour, baking powder, and salt. Mix just until the flour disappears; do not overmix.
- Gently fold in the rainbow sprinkles using a spatula. Save a tablespoon for garnish if desired.
- Transfer dough to the prepared pan and spread into an even layer, pressing down firmly to remove air pockets.
- Bake for 20-25 minutes until edges are lightly golden and the center looks set. Do not overbake.
- Let bars cool completely in the pan on a wire rack (about 1 hour).
- While bars cool, make the frosting: Beat ½ cup softened butter until smooth. Add sifted powdered sugar, ¼ teaspoon salt, and 1 teaspoon vanilla. Beat on low then medium-high until fluffy.
- Add heavy cream one tablespoon at a time until desired consistency is reached.
- Spread frosting evenly over cooled bars. Garnish with extra sprinkles.
- Let frosting set for 15 minutes before cutting into squares.
Notes
Ensure all ingredients are at room temperature for best texture. Do not overbake as bars continue to cook on the hot pan. Sift powdered sugar for smooth frosting. Store in an airtight container at room temperature for up to 4 days. Unfrosted bars can be frozen for up to 3 months.
