A comforting baked oatmeal that tastes like cinnamon rolls with a simple vanilla glaze, perfect for busy weeknights and meal prep.

- 2 cups old-fashioned rolled oats (180g)
- 2 teaspoons baking powder
- 2 tablespoons ground cinnamon
- ½ teaspoon salt
- 2 cups milk (whole milk recommended, or almond/oat milk for dairy-free)
- 1 cup Greek yogurt (or coconut yogurt for dairy-free)
- ⅓ cup maple syrup (80ml, honey as substitute)
- 2 teaspoons vanilla extract
- 1 large egg
- 4 tablespoons melted butter (56g, or coconut oil for dairy-free)
- ½ cup brown sugar (100g)
- Vanilla glaze ingredients:
- 1 cup powdered sugar (120g)
- 2–3 tablespoons milk (30-45ml)
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- In a large bowl, whisk together rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk milk, Greek yogurt, maple syrup, vanilla extract, egg, and melted butter until smooth.
- Pour wet mixture into dry ingredients and stir gently until just combined; do not overmix.
- Pour half the batter into the prepared dish. Sprinkle half the brown sugar evenly over the batter, then sprinkle 1 tablespoon cinnamon on top.
- Pour remaining batter over the cinnamon sugar layer. Top with remaining brown sugar and cinnamon.
- Use a butter knife or skewer to gently swirl the cinnamon sugar through the batter.
- Bake uncovered for 35-40 minutes until the top is golden and the center is set but moist. Test with a toothpick.
- While baking, whisk powdered sugar, vanilla extract, and 2 tablespoons milk in a small bowl until smooth. Add more milk a teaspoon at a time to reach a thick but pourable glaze consistency.
- Let baked oatmeal cool about 10 minutes, then drizzle vanilla glaze over the top. Cut into squares and serve warm.
Notes
Use old-fashioned rolled oats for best texture; instant oats will be mushy. Swirl cinnamon sugar gently for cinnamon roll effect. Prepare batter the night before for quick mornings. Drizzle glaze just before serving to keep it glossy. Add nuts or fruit for variations. Reheat leftovers with a splash of milk.
