Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, fully incorporating each before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Gently fold in the dried cranberries and white chocolate chips with a spatula until evenly distributed.
  7. Drop dough by heaping tablespoons or use a 1.5-tablespoon cookie scoop onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 12 to 15 minutes until edges are set and just starting to turn golden but centers still look soft.
  9. Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes
