Description

  • 1 cup sweetened condensed milk (300ml)
  • 2 large egg whites, room temperature
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet chocolate chips or chopped chocolate (170g)
  • Optional: pinch of salt
  • Optional variations: ½ cup mini chocolate chips or chopped nuts, lemon zest, almond extract

Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix shredded coconut and sweetened condensed milk until combined.
  3. In a separate bowl, beat egg whites with a mixer or whisk until foamy but not stiff. Add vanilla extract.
  4. Fold egg whites gently into the coconut-condensed milk mixture. Add a pinch of salt if desired.
  5. Using a medium cookie scoop or tablespoon, drop mounds of mixture onto the parchment-lined baking sheet about 1 inch apart.
  6. Bake for 20 to 25 minutes until edges are golden brown but centers remain soft and chewy.
  7. Remove from oven and let cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  8. Melt chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, or use a double boiler.
  9. Dip the bottom half of each cooled macaroon into melted chocolate, letting excess drip off. Place on parchment or cooling rack.
  10. Optional: sprinkle flaky sea salt on chocolate before it sets.
  11. Let chocolate harden at room temperature or refrigerate for 10 minutes.
  12. Enjoy fresh or store in an airtight container.

Notes

Do not overbake to keep macaroons chewy. Use sweetened shredded coconut for best texture. Beat egg whites until foamy but not stiff. Use good quality chocolate for dipping. Macaroons can be made ahead and stored in the fridge. Avoid freezing as chocolate may separate.
