  • 1/2 cup (113g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) packed dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (plus flaky sea salt for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy (about 2 minutes).
  3. Add the egg and vanilla extract, mixing until just combined. Scrape down the sides of the bowl.
  4. Add the almond butter and mix on low speed until fully incorporated.
  5. Stir in the baking soda and 1/2 teaspoon salt until just combined. The dough will be thick and sticky.
  6. Scoop tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart. Chill for 10-15 minutes if desired to prevent spreading.
  7. Bake for 10-12 minutes until edges are lightly golden but centers remain soft.
  8. Immediately sprinkle flaky sea salt on top while cookies are hot.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter and egg are at room temperature for best emulsification. Do not overbake as cookies continue to cook on the hot pan. Chilling the dough helps prevent spreading and develops flavor. Use flaky sea salt (like Maldon) for the topping to provide texture contrast.
