Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Cook bacon in a large skillet over medium heat until nearly crisp (about 90% done). Remove, drain on paper towels, and crumble into bite-sized pieces while still warm.
  3. In a large mixing bowl, combine frozen hash browns, crumbled bacon, diced onion, and shredded cheddar cheese. Toss to distribute evenly.
  4. In a separate bowl, whisk together eggs, heavy cream (or half-and-half), salt, and pepper until smooth and slightly frothy.
