Description

Crispy, golden, and melty chicken quesadillas made with leftover rotisserie chicken, Mexican blend cheese, and salsa. A quick, customizable family favorite that comes together in under 20 minutes.

  • 3 cups shredded chicken (leftover rotisserie or poached)
  • 2 cups shredded Mexican blend cheese (Monterey Jack and Cheddar mix)
  • 1/2 cup chunky salsa (drained of excess liquid)
  • 1 can (15oz) black beans, drained and rinsed
  • 1/2 cup corn (frozen or canned)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil or butter
  • 8 large flour tortillas (10-inch)
  • Sour cream and fresh cilantro for serving

Instructions

  1. In a medium bowl, combine shredded chicken, black beans, corn, salsa, cumin, chili powder, and garlic powder. Mix until evenly coated. Taste and add salt if needed.
  2. Place a large skillet over medium heat and add olive oil or butter. Heat until the oil shimmers or butter stops foaming.
  3. Place one tortilla in the center of the pan. Sprinkle half the cheese over one half of the tortilla, pile the chicken mixture on top, and cover with the remaining cheese.
  4. Fold the empty half of the tortilla over the filling. Press down gently with a spatula.
  5. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  6. Flip the quesadilla carefully using a spatula. Cook the other side for 2-3 minutes until golden and cheese is melted.
  7. Remove to a cutting board and repeat with remaining tortillas and filling.
  8. Slice each quesadilla into 4-6 wedges and serve immediately with sour cream and cilantro.

Notes

Drain salsa to prevent soggy quesadillas. Use medium heat to ensure cheese melts before tortilla burns. For meal prep, assemble uncooked quesadillas and freeze for up to 2 months. Reheat in air fryer or toaster oven to maintain crispiness.
